Beef stew with potatoes - Spizzatinu cu li patati PDF Print E-mail

Ingredients: 1 kg (2 lbs) beef, corsely diced; 1 Kg (2 lbs) potatoes; 2 onions; 1 carrot; 1 celery stalk; 50 gr (2 oz) tomato puree; 2 dl (6 fl oz) olive oil; 2 dl (6 fl oz) white wine; a pinh of salt and pepper.

Brown the meat in a pan with a bit of oil. Place the beef with thinly sliced vegetables in a large pan, add the oil and cook over high heat for 8 minutes. Add the wine and let evaporate. Add the tomato puree and continue cooking the stew for about an hour. Meanwhile peel the potatoes and cut into wedges all about the same size. Add the potatoes in the stew when there are about 20-25 minutes of cooking. When cooked, season with salt and pepper. Serve hot
