Ingredients: 800 gr (32 oz) baby sardines; 3 eggs; 100 gr (4 oz) grated parmesan cheese; a sprig of parsley; strong flour; a pinch of salt; olive oil. Beat eggs in a bowl, add salt, parsley, parmesan and baby sardine with flour and mix well. Fry the mixture in a pan with hot oil taking it with a spoon and place it in oil. Place on kitchen paper to remove any excess oil and serve hot.
