Fried salt cod - Baccalaru frittu PDF Print E-mail

Ingredients: 800 gr (32 oz) salt cod; strong flour; olive oil; a sprig of parsley chopped.

Desalted the salt cod by placing immersed in cold water for about 4 days (according to the size of the piece) and changing the water at least twice a day.
Drain the salt cod, dry it well, cut into small pieces and flour each one. Fry the pieces of cod in plenty of boiling olive oil keeping low heat and stirring frequently. Once cooked, place the salt cod to drain on paper towels. Sprinkle with parsley and serve hot.
